Buckwheat chocolate chips cookies

Hey there ! Today I am sharing with you this delicious recipe no-gluten / dairy free cookies. 
I have never been a fan of buckwheat crepes growing up . To be honest I thought that they were a bit boring , but now I am more than ready to rediscover buckwheat flour! Plus , the cookies turned out so fine , crispy on the outside and perfectly soft inside. 
For these cookies you will need : 
1 1/4 cup buckwheat 
1/2 tsp backing soda 
1/2 cup coconut oil ( but you can use butter)
1/2 cup brown sugar ( i used stevia) 
1 egg
1/2 tsp vanilla extract 
1 cup dark chocolate chips 
- Preheat the oven 350F.
-In a medium bowl , stir the flour,backing soda and set aside
-In a larger bowl, cream the coconut oil/butter with the sugar. Stir in the vanilla extract , the egg  until it is well combined. 
-Slowly add the buckwheat flour mixture in the larger bowl. 
-Let chill the dough in the fridge for 20-30 minutes so the dough can hardened a bit. 
-Cook them for 15-20 minutes 
-ENJOY :)

( Oh and by the way , i tried buckwheat flour pancakes , super simple : 80g of buckwheat flour and 250ml of almond milk and VOILA )
